This release is particularly unique as it uses barley from fields that no longer exist. The farm sold these fields to County Wicklow for the development of a modern residential complex. Woodbrook represents the first “lost” Single Farm Origin, and we hope it remains an exception.
The Waterford Peated Woodbrook 1.1 is a high-peat single malt Irish whisky crafted using only barley from the Woodbrook farm in the Shankill area (Co. Dublin). The barley variety is “Olympus,” harvested on August 12, 2017. It was malted with peat from the Ballyteague area, achieving a phenol level of 74ppm. Fermentation with the distillery’s proprietary yeast, “Mauri,” began on August 15, 2019, lasting 139 hours. The double distillation took place between August 21 and 29, 2019.
The spirit aged precisely 3 years, 7 months, and 1 day in a mix of casks:
- 33% American oak first-fill ex-bourbon
- 23% French oak ex-Vin Doux Naturel
- 20% French oak barrels
- 18% Virgin American oak
This Irish whisky was bottled on July 18, 2023, at 50% ABV, unchillfiltered and with no added coloring, in a limited release of 8,000 bottles.
Each bottle features a "Téireoir Code," which, when entered on the distillery's website, provides detailed information about the production of this single malt.

Color: Pale straw yellow.
Nose: A complex and nuanced bouquet begins with creamy sweetness reminiscent of crème brûlée, followed by the zesty freshness of lemon peel. Waxed candle notes and a subtle mineral hint, with a touch of hemp, add depth. A backdrop of wildflowers completes the aromatic profile.
Palate: Initial citrus notes lead to flavors of apricot marmalade and spices, followed by buttery shortbread cookies. Smoky elements emerge with hints of campfire ash and black tea, complemented by lemon accents.
Finish: Long and enveloping, with a crescendo of spices and campfire smoke. Vanilla, citrus, and a subtle saline edge enhance the smoky aromas, leaving a lingering impression.
