The Waterford Peated Lacken is a peated single malt Irish whisky that exclusively uses barley from the Lacken farm in the Wexford region. The barley variety, “Olympus,” was harvested on August 13, 2017, and malted with peat from Ballyteague, achieving a peat level of 57 ppm. Fermentation, using the distillery’s proprietary “Mauri” yeast, began on June 5, 2019, and double distillation took place between June 11 and June 24, 2019. The spirit was aged for exactly 3 years, 9 months, and 10 days in a mix of barrels, divided as follows: 39% American oak first-fill ex-bourbon, 23% French ex-Vin Doux Naturel, 20% virgin American oak, and 18% French oak. This Irish whisky was bottled on July 18, 2023, at 50% ABV, non-chill-filtered, and with no added color.

Color: Bright olive oil.
Aroma: Fresh and refined, with notes of malt and spices, charred wood, butter biscuits, orange zest, and a hint of peat smoke.
Flavor: Oily on the palate, with peat smoke much more prominent than on the nose, followed by smoked ham, honey, apple, and black tea, with hints of coffee.
Finish: Good persistence, slightly spicy and smoky, with notes of cigar tobacco, citrus, vanilla, and toasted wood.
