Biodynamic agriculture goes beyond the conventional concepts of ecology and sustainability. Drawing from practices such as the ancient tradition of lunar cycles, it focuses on producing food and substances naturally, aiming to use energy and resources responsibly. Practiced mainly by visionaries and innovators, we eagerly anticipate discovering the flavors captured in this remarkable distillate.
The Waterford Biodynamic Luna 1.1 is the first biodynamic and organic single malt Irish whiskey released by the Waterford distillery. The barley was grown on three different Irish farms—those of Trevor Harris, John McDonnell, and Alan Mooney—using a single barley variety, "Olympus." Fermentation was extraordinarily slow, lasting 194 hours, with the distillery’s proprietary yeast, "Mauri." Double distillation was conducted between March 7 and March 12, 2018. The spirit aged precisely 3 years, 2 months, and 1 day in a mix of casks: 35% American oak first-fill ex-bourbon, 26% French oak, 22% French Vin Doux Naturel, and 17% virgin American oak. This Irish whiskey was bottled in 2021 at 50% ABV, unchill-filtered and with no added color, in a release of 21,000 bottles.

Color: Golden peach.
Aroma: On the nose, notes of orange zest, brown sugar, vanilla, chocolate, apple, and pear emerge, with hints of banana and lavender.
Palate: Warm, oily, and spicy, with flavors of pepper, ginger, licorice, dark cocoa, citrus zest, and beeswax, accompanied by hints of baked apple.
Finish: Good persistence, slightly spicy, with ginger, apple, pear, licorice root, and citrus notes, alongside a light menthol hint.
