Nata nel 1988 come imbottigliatore indipendente negli anni l’azienda Signatory di Andrew Symington è cresciuta e oggi è anche proprietaria della distilleria di Edradour nelle Highland scozzesi.

Il Mortlach 2007 Signatory Cask Strength Collection è un single malt Scotch whisky invecchiato per circa 14 anni in due botti refill hogshead prima di essere fatto affinare per 19 mesi in una botte fresca ex-sherry butt. Questo whisky è stato imbottigliato il 19 luglio 2022 al suo grado naturale (51,8% vol.) senza aggiunta di coloranti in 686 bottiglie.
