Kilchoman Distillery was founded in 2005 by Anthony Wills and stands out as one of the few farm distilleries on the island, meaning it grows a portion of the barley used in whisky production directly on its own land. Kilchoman is known for its artisanal, traditional approach to whisky-making.
The Kilchoman Sanaig Cask Strength is a heavily peated single malt Scotch whisky aged in a mix of ex-bourbon and ex-sherry casks, with a heavier influence from the sherry casks. This whisky is bottled at full cask strength (57.8% ABV), unchill-filtered, and at its natural color.

Aroma: The entry is spicy but quickly gives way to a blend of earthy and vegetal peat, soot, and smoldering embers. Meaty notes of smoked beef and bacon intertwine with black pepper, nutmeg, and a touch of iodine. Dark fruits like blackberries and plums add sweetness, accompanied by hints of dark chocolate and toffee.
Palate: On the palate, there’s an explosion of maritime notes, accompanied by a backdrop of ripe red fruit, jam, and coffee. Hints of honey mingle with strawberries covered in chocolate and caramel. The smokier side emerges over time, bringing with it notes of burning charcoal.
Finish: Long and persistent, with blackcurrant, licorice, and a subtle sulfuric touch that slowly fades into an echo of ash and smoke, with hints of toasted wood and an unexpected earthy sweetness.
