Daftmill is a small distillery located in the Fife region of Scotland. Founded in 2005 by Francis Cuthbert, the distillery is known for producing high-quality single malt whisky in limited quantities. The distillery uses locally grown barley and pure water from the surrounding springs to produce their distinctive single malt with obvious terroir-related characteristics.
The Daftmill 2008 Winter Release is a single malt Scotch whisky distilled between February 14th and April 28th, 2008, aged for at least 12 years in 23 first-fill ex-bourbon casks before being bottled in 2020 at the classic 46% ABV with no added coloring, in only 6000 total bottles.

Color: Bright gold.
Aroma: On the nose, it is fresh in true Lowland style, with floral notes of blooming meadows, grassy fields, then vanilla and honey with a background aroma of malt, and light hints of lemon.
Taste: On the palate, it begins with sweet notes of honey, quickly followed by malt and grains, then a light spiciness (white pepper) with hints of hay.
Finish: Medium persistence, smooth and delicate; here the honey fades away, leaving room for the aroma of malt and vanilla.
