That Boutique-y Whisky Company is back with a second batch of single malt whiskey from Seattle’s Copperworks Distillery. Copperworks founders Jason and Micah come from a brewing background and have chosen to make whiskey differently from many other American producers. The distillery focuses on malt whiskey, which is better suited to Seattle’s climate and aging conditions compared to places like Kentucky or Tennessee. Their wash undergoes an incredibly long fermentation: seven days at 21°C, followed by another two weeks at 2°C!
The Copperworks 3 Years Old is a single malt whiskey aged for 3 years in a single ex-bourbon cask before being bottled at cask strength (62.7% ABV), non-chill filtered, and at its natural color. Only 275 bottles have been released.
