Even though it uses the same type and specification of malt as its sister Lagavulin, Caol Ila's distillation regime, with its longer fermentation, deeper cut, and taller stills, reduces the heavy phenols. The character of a Caol Ila is the ability to combine fruity pear notes, a touch of herbs, and a hint of spice with marine notes: sea breeze, lobster shell, and delicate smoke.

The Caol Ila 15 Years Old Oloroso Sherry Finish is a peated single malt Scotch whisky distilled in 2008 and aged for about 14 years in ex-bourbon casks before being rested for an additional 6 months in an ex-Oloroso sherry hogshead. This whisky is bottled at its natural strength (54% ABV), non-chill filtered, and with no added coloring.

Color: Golden amber.

Nose: An elegant peat smoke welcomes us, with notes of apple, raisins, dark chocolate, and leather, followed by hints of citrus and cinnamon.

Palate: Full-bodied and slightly dry, with the peat smoke more pronounced than on the nose. Notes of blood orange, raisins, cinnamon, black pepper, with hints of ash and beach bonfire.

Finish: The finish is lively, long, and persistent, with notes of black pepper and cinnamon, followed by brine, citrus, and the classic marine and ashy notes of Caol Ila.
