The Caol Ila distillery, founded in 1846 by Hector Henderson, is located near Port Askaig on the northeastern coast of Islay, Scotland. The name "Caol Ila" comes from Gaelic and means "Sound of Islay," referring to the stretch of water that separates Islay from the Isle of Jura.
The Caol Ila 12 Years Old is a peated single malt Scotch whisky, aged for 12 years in a single first-fill ex-Oloroso sherry cask before being bottled at its natural strength (51.6% ABV), without chill filtration and in its natural color, with only 694 bottles available.

Nose: A complex opening—sweet barbecue-like smoke intertwines with notes of smoked bacon and wood, with a hint of sea air. Subtle sherry influences emerge, though not as intense as one might expect from a first-fill cask, followed by Caol Ila’s signature peat, almost like a distant echo.
Palate: The whisky has a rich and full-bodied texture. Notes of ash and slightly medicinal smoke blend with pleasant hints of fruit, including ripe apples and blackcurrants. There's a fascinating contrast between smoky, meaty aromas and sweet jam-like flavors, balanced by the dry tannins characteristic of Oloroso sherry. Hints of pepper and a lingering dark chocolate aftertaste complete the experience.
Finish: Long and well-balanced, where the smoke merges with fruity notes of apple and pineapple, accompanied by a subtle citrus acidity.
