The Caol Ila distillery, originally built in 1846, does not showcase the typical appearance of ancient buildings. This is because in 1972, after about 125 years of continuous operation, Diageo decided to demolish the original structures and replace them with more modern and functional buildings. This decision allowed Caol Ila to become the distillery with the largest production capacity on the island of Islay without compromising the quality of its whisky, which has remained consistently excellent.
The Caol Ila 11 Years Old Ambrosial Feast is an unpeated single malt Scotch whisky. Its production employed a short fermentation process using a highly turbid wort. The whisky was aged in a mix of refill, rejuvenated, and ex-wine casks before being bottled at its natural strength of 57.3% ABV.

Aroma: Soft despite the high ABV, with notes of cereals, crusty bread, powdered sugar, and lemon sorbet, accompanied by marine hints, dried grass, a touch of mint, and vanilla. Adding water brings out sweeter notes of herbs, custard tart, and grapes.
Taste: Smooth and light-bodied, initially sweet with notes of toffee, dark chocolate, and dried fruits, transitioning to spiciness with hints of licorice and herbs. Adding water makes it easier to drink, revealing creamy and fruity notes with a touch of brininess.
Finish: Medium length, clean and elegant, with spicy and herbal notes of juniper and eucalyptus. Adding water leaves a clean and fresh aftertaste.
