Recently, there has been a lot of talk about the new English distilleries, as some of them are doing a fantastic job, and Bimber is one of those that is probably doing it best. The distillery is located in London and has been active since 2015. One of its unique features lies in its barley: Bimber has an exclusive agreement with a grower from Hampshire, who supplies them with high-quality Concerto and Laureate barley for production. Additionally, they have an in-house cooperage with master coopers who can craft any type of cask, such as the one used in this release.
The Bimber Re-charred Oak Cask Batch 001 is a single malt whisky distilled in 2016 and aged in freshly charred American oak casks. In fact, before placing the distillate inside the cask, the master coopers re-charred the interior to enhance the cask impact and impart specific notes to the whisky. For whisky geeks, we can add that the charring was done by hand at Bimber, reaching level #4, the so-called "alligator" level. This whisky was finally bottled in September 2019 at its natural strength (51.9% ABV), unfiltered and without added colorants, with a total of 5,000 bottles produced.

Color: Caramel.
Aroma: The nose welcomes us with fruity notes of peach, orange, and lemon, followed by a touch of black pepper, caramel, and hints of coffee.
Taste: On the palate, it has good consistency for a 3-year-old, with notes of vanilla, chocolate, toasted nuts, red fruit, and lemon with a pinch of nutmeg.
Finish: Definitely complex, spicy, with notes of vanilla, caramel, nutmeg, and cinnamon, alongside hints of citrus and dark chocolate.
