This was the first Texas whiskey to be produced since the end of Prohibition. It is made with blue corn, one of the oldest American corn varieties, originally from Central America. It was cultivated by the Hopi tribe and possibly even earlier by pre-Columbian civilizations.
The Balcones Baby Blue Corn Whiskey is an American whiskey made from 100% blue corn and distilled in a traditional pot still using small copper stills. It is then aged in new American white oak barrels, which are very small (5 gallons, less than 20 liters), before being bottled at 92 proof (46% ABV) without chill filtration or added color.

Color: Caramel.
Aroma: Notes of vanilla, corn, citrus, caramel, and banana with hints of wood and honey.
Taste: Oily on the palate, with flavors of vanilla, caramel, corn, toasted hazelnut, baked apple, and salted butter.
Finish: Medium persistence, spicy, with notes of vanilla and corn, followed by light caramel, a touch of honey, and hints of cinnamon and ginger.
